What You'll Need
- ¾ cup unsweetened coconut milk
- ¾ cup water
- ¼ cup fresh mango, peeled, pitted, and cut into small cubes
- ¼ cup pineapple, cut into small cubes (fresh or canned in juice, not syrup)
How to Make It
- Mix the base: Stir together the coconut milk and water until combined.
- Load the fruit: Add the mango and pineapple pieces to the mold.
- Fill the mold: Pour the coconut milk mixture over the fruit to fill.
- Freeze: Place on a flat surface and freeze overnight (at least 8 hours).
- Serve: Run under warm water for 10–15 seconds, flex to release, and serve.
⚠️ Important: Use unsweetened coconut milk — not cream of coconut or sweetened varieties. Always remove the mango pit and skin entirely. Offer pineapple in moderation due to its natural sugar content.
